Winter Vegetable & Smoked Sausage Kabobs
Prep Time: 30 minutes * Cook Time: 20 minutes * Serves 5-6
The wonderful thing about this recipe is its versatility! If you are missing any of the vegetables, you can simply do without or substitute something else. Furthermore, this is a great recipe for when you have helping hands in the kitchen. Set up an assembly line and allow each person to skewer their meat or vegetables of choice!
Ingredients/Supplies:
- 15 wooden skewers 
- 1lb Breakaway Farms Smokehouse Sausage, cut into ¾-inch slices 
- 3 tablespoons extra-virgin olive oil 
- 15 medium Brussels sprouts, outer leaves removed 
- 1 large sweet potato, cut into ¾-inch cubes 
- 1 small head cauliflower, broken into florets (you’ll need 15 florets) 
- 12oz of your favorite fresh mushrooms 
- 1 large red onion, cut into 1 ½-inch pieces 
Directions:
- Soak skewers in water for at least 30 minutes. 
- Preheat oven to 450 F. 
- Toss all vegetables in extra virgin olive oil 
- Place 2 slices of sausage and 1 of each type of vegetable on each skewer (place in any order you prefer). 
- Place skewers on a baking sheet & bake for 10 minutes. 
- Remove from oven, turn skewers and bake for another 10 minutes. 
- Enjoy warm!
