Korean Chili Sausage Stir Fry

An exciting twist to your classic stir fry. Made all in one pan, this combination of Korean Chili Sausage and all of your favorite veggies will make an excellent dinner with a slight kick to it!

Ingredients

Stir Fry Sauce

  • 1/4 cup chicken broth

  • 1/4 cup low-sodium soy sauce

  • 1 tbsp honey

  • 1 tsp sesame oil

  • 1 tsp rice vinegar

  • 1 tbsp cornstarch

Stir Fry Ingredients

  • 4 Links, Korean Chili Sausage

  • 1 tbsp olive oil

  • 1 green bell pepper, deseeded and thinly sliced

  • 1 red bell pepper, deseeded and thinly sliced

  • 1 small carrot, chopped

  • 2 cups broccoli florets

  • 1 small yellow onion, chopped

  • 1 tbsp fresh grated ginger

  • 4 garlic cloves, minced

Optional toppings/sides

  • Green onions, chopped

  • Sesame seeds

  • White rice

  • Wheat or rice noodles

Instructions

Mix Your Sauce

  1. In a small bowl, whisk together the chicken broth, soy sauce, honey, sesame oil, rice vinegar, and cornstarch. Set aside.

Cook Your Sausage and Veggies

  1. In a medium pan or wok over medium-high heat, cook your sausage until browned. Remove sausage from casing for a ground sausage stir fry, or cook links in a pan and cut into pieces later on. Remove ground sausage or sausage links from the pan and set aside, leaving oils and juices to rest in the pan.

  2. Add 1 tbsp olive oil to the juices in the pan along with your red + green bell peppers, onion, carrots, and broccoli. Cook until vegetables are tender, about 4-5 minutes.

  3. Add your sausage back to the pan along with the minced ginger and garlic. Stir for 30 seconds to combine with the vegetables. Pour in the sauce and stir fry for an additional 2 minutes, watching as the sauce thickens.

  4. Top with sesame seeds or green onions and enjoy with white rice!
