Corned Beef Brisket & Cabbage Crockpot Recipe

Prep Time: 10 min * Cook Time: 8 Hours * Serves: 4-6

Ingredients

  • 1 small onion

Instructions

  1. Place potatoes in the bottom of a 6qt crockpot.

  2. Cut each carrot into 4 pieces and distribute evenly around the potatoes.

  3. Slice onion & place evenly on top of potatoes & carrots.

  4. Rinse the corned beef brisket and place on top of the potatoes & onions

  5. Pour 5 c. of liquid over the meat (2 c. water, 2c beef broth and 1c. beer). This is what we use, however, a different ratio can work or just water would be fine too.

  6. Sprinkle the corned beef spice packet on top of the brisket. Place the lid on the crockpot and cook on low for 8 hours. 

  7. 1 hr before serving place large leaves of cabbage on top of brisket and return the lid to steam the cabbage until it reaches your desired tenderness.

  8. Remove all ingredients from the crockpot, separating the potatoes and vegetables from the corned beef brisket. Placing the corned beef brisket on a platter or cutting board, slice to desired thickness.

Serve with salt & pepper to taste and enjoy!
