Chicken Chipotle Bowl

This bowl is a quick way to feed your family or an excellent way to meal-prep for the week ahead. Packed with protein and fiber, this nutrient-dense meal is the perfect way to end any day.

Bowl Ingredients

  • 1 cup dry white rice

  • 2 cups chopped romaine lettuce

  • 1 cup canned corn (drained and rinsed)

  • 1 cup canned black beans (drained and rinsed)

  • 1 avocado (smashed or sliced)

  • 1/4 cup sour cream (optional)

  • 1/4 cup shredded cheddar cheese

Salsa Ingredients (Optional)

  • 1 tbsp. chopped fresh cilantro

  • 1/2 tomato (chopped)

  • 1/2 onion (chopped)

  • 2 tbsp. white vinegar

  • juice of 2 limes

  • 1/8 tsp. kosher salt

Instructions

Cooking chicken

  1. Prepare your chicken: Cut your breasts into bite-sized pieces, and add them to a medium-sized bowl. Add olive oil, paprika, cumin, chili powder, salt, and pepper, and mix well until the chicken is coated in spices and oil.

  2. Heat a medium-sized pan over medium heat. Add chicken cubes to the pan and cook on each side for 7-9 minutes. Set aside

Creating the bowl

  1. Cook the white rice following the cooking instructions on the package.

  2. Evenly divide romaine lettuce, beans, rice, corn, and the cooked chicken breast cubes onto a plate.

  3. Top with avocado slices, salsa, sour cream, and cheddar cheese, if applicable. Enjoy!

Mixing the salsa (Optional)

  1. Making the salsa: Add the cilantro, tomato, onion, white vinegar, lime juice, and kosher salt to a bowl. Mix well until combined.
