Chicken Chipotle Bowl
This bowl is a quick way to feed your family or an excellent way to meal-prep for the week ahead. Packed with protein and fiber, this nutrient-dense meal is the perfect way to end any day.

Ingredients
Chicken Ingredients
2 tbsp. olive oil
1 tsp. ground paprika
1 tsp. ground cumin
1/2 tsp. chili powder
1/2 tsp. kosher salt
1/2 tsp. ground black pepper
Bowl Ingredients
1 cup dry white rice
2 cups chopped romaine lettuce
1 cup canned corn (drained and rinsed)
1 cup canned black beans (drained and rinsed)
1 avocado (smashed or sliced)
1/4 cup sour cream (optional)
1/4 cup shredded cheddar cheese
Salsa Ingredients (Optional)
1 tbsp. chopped fresh cilantro
1/2 tomato (chopped)
1/2 onion (chopped)
2 tbsp. white vinegar
juice of 2 limes
1/8 tsp. kosher salt
Instructions
Cooking chicken
Prepare your chicken: Cut your breasts into bite-sized pieces, and add them to a medium-sized bowl. Add olive oil, paprika, cumin, chili powder, salt, and pepper, and mix well until the chicken is coated in spices and oil.
Heat a medium-sized pan over medium heat. Add chicken cubes to the pan and cook on each side for 7-9 minutes. Set aside
Creating the bowl
Cook the white rice following the cooking instructions on the package.
Evenly divide romaine lettuce, beans, rice, corn, and the cooked chicken breast cubes onto a plate.
Top with avocado slices, salsa, sour cream, and cheddar cheese, if applicable. Enjoy!
Mixing the salsa (Optional)
Making the salsa: Add the cilantro, tomato, onion, white vinegar, lime juice, and kosher salt to a bowl. Mix well until combined.
