Asian Pork Chop Stir Fry
Prep Time: 20 Min * Cook Time: 10min * Serves 6
Sauce Ingredients
- ½ Cup soy sauce 
- 1 Teaspoon sesame oil 
- ½ Tablespoon rice vinegar 
- 2 Cloves garlic, minced 
- 1-2 Teaspoons grated ginger 
- 1 Tablespoon sugar or honey *up to 2 tablespoons to taste 
- 1 Tablespoon cornstarch 
- Pinch of red pepper flakes, optional 
Other Ingredients
- 2 Tablespoons Extra virgin olive oil 
- 1 Medium red bell pepper, thinly sliced 
- 1 Medium onion, thinly sliced 
- 1 Bunch baby bok choy, leaves separated 
- 1.5 Cups broccoli florets, finely chopped 
- 4oz oyster mushrooms, thinly sliced 
- 2 Tablespoons toasted sesame seeds, for garnish, optional 
Sauce Instructions: In a bowl or mason jar with a lid, combine all ingredients & whisk or shake well until well combined.
Stir Fry Instructions
- Cut boneless pork chops into ¼” strips 
- Heat the olive oil in a wok or a large frying pan with high sides over medium-high heat. Add the pork and cook, stirring occasionally, until the pork is nicely browned on all sides, around 2-3 minutes. 
- Add bell pepper, onion, baby bok choy, broccoli florets & oyster mushrooms. Stir fry the veggies until they become crisp-tender, around 3-4 minutes. 
- Add Sauce and heat through. 
- Serve over your favorite rice and enjoy!
